Abstract
The autoxidative behavior of polyunsaturated triacylglycerol (TG), phospholipid (PL) and their 3 : 1 mixture was examined, since salmon egg oil consisting of TG and PL was previously found to be much more stable than salmon oil consisting only of TG, and this higher stability of salmon egg oil was dependent on the lipid composition, and the amounts of tocopherol and astaxanthin coexisted. PL and TG fractionated from salmon egg oil and the 3 : 1 mixture were autoxidized at 30°C in the dark with or without tocopherol. The autoxidative behavior of these samples was monitored by peroxide value (PV), carbonyl value (CV) and fatty acid composition.<BR>Increase in PV was followed by CV that during the autoxidation of TG, but CV began to rise simultaneously with PV at the early stage of the autoxidation of PL. Differences in the autoxidative behavior of PL and TG may possibly arise from the lesser stability of hydroperoxides as the main primary products of autoxidation or other pathway for the conversion of lipid peroxy radicals to the secondary carbonyl compounds.<BR>The addition of 0.1% tocopherol to the samples retarded autoxidation in all cases. The antioxidative effect of tocopherol as a free radical scavenger was greater on the TG-PL mixture compared to PL or TG. Thus appear, coexistence of tocopherol and PL in TG would very effective for stabilizing polyunsaturated TG under autoxidation conditions.
