酵素の脂質分析への応用 Application of Enzymes to Lipids Analyses
In relation to the application of enzymes to lipids analysis, characteristics of lipases, phospholipases and cholesterol esterase are reviewed in the first part. Lipase specificities are discussed in terms of positional specificity, stereospecificity and fatty acid specificity. Phospholipase specificities are discussed in view of their sites of hydrolyses and of base group specificity, and finally fatty acid specificity of cholesterol esterase is mentioned.<BR>In the second part, applications are reviewed of lipases to stereospecific is analysis of fatty acid composition in triacylglycerols, of phospholipases to analysis of phospholipids composition and of cholesterol esterase to clinical analysis of lipoproteins in serum.
