The BIological Reason Why the Hydrostatic Pressure Sterilization is Effective at Cold Temperature

Hydrostatic pressure sterilization is more effective at cold temperature than at room temperature. On the other hand, the barotolerance of yeast is dependent on Hsp104 and trehalose. Thus we examined the temperature dependence of barotolerance with Hsp104- and trehalose-deficient mutants. The Hsp104-deficient mutant did not show a temperature dependence as the wild type strains did. This suggests that the reason why hydrostatic pressure sterilization is effective at cold temperature is because of the low activity of Hsp104.
