Abstract

解凍とともに融解するノルウェー産サバについて, 官能, 細菌および寄生虫検査を行った結果, 粘液胞子虫類寄生によるジェリーミートと思われた.

Mackerel meat imported from Norway became jellied with defrosting, the meat was suspected to be deteriorated by Myxosporidium infection by organoleptic, parasitological and bacteriological inspections.
