The experiment was conducted to investigate the effects of partial substitution of amino acid mixture for dietary proteins on the serum and liver cholesterol concentrations in chicks. Soybean protein isolate (SPI) or casein was used to provide 20 and 30% crude protein (CP) in the diet. Furthermore, the half and one-third of each protein in CP 20 and 30% diets, respectively, were replaced with the amino acid mixture imitating the respective protein. All diets were supplemented with 0.5% cholesterol and given to seven-day-old Single Comb White Leghorn male chicks for 10 days. Chicks given SPI diets had lower serum and liver cholesterol concentrations as compared with those given casein diets, regardless of the dietary protein content. However, the hypocholesterolemic effect of SPI was partly lost when half of SPI in the CP 20% diet was replaced with the amino acid mixture equivalent to SPI. Partial substitution of the casein-type amino acid mixture for the CP 20% casein diet had little effect on the serum and liver cholesterol concentrations. The increase in the dietary CP from 20 to 30% by adding the protein or the corresponding amino acid mixture lowered the serum and liver cholesterol concentrations in both SPI- and casein-fed chicks, but addition of the amino acid mixture was less effective than that of the parent protein. These results indicated that the differential effects of SPI and casein on the serum and liver cholesterol concentrations were not only due to the different amino acid composition in the two proteins.
