Avenanthramides, a series of substitute N-cinnamoylanthranilate derivatives, are phytoalexins in oats. Anthranilate, a precursor of avenanthramide, is synthesized from chorismate and glutamine by anthranilate synthase (AS). The induction of AS activity after elicitor treatment was investigated in primary oat leaves. The AS activity started to increase 3 hr after elicitation and reached a maximum by 6 hr. Among the oligo-N-acetylchitooligosaccharides tested, tetra-, penta-, and hexasaccharides effectively induced the enzyme activity in a dose-dependent menner. These results were well correlated with the accumulation of avenanthramides, suggesting a regulatory role of AS in avenanthramides biosynthesis.
