Abstract
Fermentation tests were carried out with 30 selected indigenous Saccharomyces cerevisiae strains. Two were chosen as starters for a minimal SO_2 additive plan. Most of the remainder were unsuitable, showing high level SO_2-acceptor production.Functional selection is considered advisable in all Mediterranean type winegrowing regions.
