Abstract

1) The authors examined the turbidity caused by the addition of various salts to the alcoholic solution of Shiroboke. Zn, Mn, Mg and Fe ions increased the turbidity and accelerated its appearance markedly, and these tendencies were conspicuous in the sample A-a which was removed from the ions with ion exchange resin.2) In the alcoholic solution of Shiroboke which contained acids the above tendencies were weak, and effect of deionization did not appear conspicuously.3) When the salts were added to Sake, their effect appeared little. On the Sake which was mixed with Shiroboke the effect of salts appeared a little but it did not vary with the deionization of Shiroboke.
