抄録

This report deals with the results of the experiment for the preparation of baking sherry from the must and wine treated with iron-change resins.The methods of preparation are stated below.1) Preparation by the baking of the wine which was made of the must concentrated after treatment with cation-and anion-exchange resins (mixed-bed system) or anion-exchange resin only (mono-bed system), (Table 6,A~C).2) Preparation by the baking of the wine which was made of the must treated with anion-exchange rsin (mono-bed system) after concentration (Table 6,D).3) Preparation from the waines baked after successive treatment by means of the mixed-bed and the mono-bed system (Table 6,E~G).From the viewpoint of the quality of the baking sherry produced, the results obtained by the treatments B and F (Table 6) were excellent.
