配食用保温容器における食器の配置に関する研究  [in Japanese] Arrangement of Dishes and Foods on Delivery Meal Box  [in Japanese]

Abstract

高齢者向け在宅配食サービスにおいては, 一般に食事の保温や保護を目的に, 配食用保温容器(以下, 配食保温容器)が用いられる。本研究では, 配食保温容器に使用する食器の平面形状, 大きさ, 盛り付けおよび食器の配置等について, 高齢者および若年者による主観評価をもとに様々な検討を行った。その結果, 食器の平面形状・大きさについては, 食品毎にそれぞれ一定のものが選択される傾向が見られたが, 高齢者・若年者間および男女間において特に有意な差は見られなかった。また, 盛り付けに関しては, 高齢者において, 1つの食品を1つの食器に盛り付ける傾向があることが分かった。さらに, 食器および食品の配置については, 高齢者・若年者間に有意差の見られるものもあったが, 男女間における有意差の方が大きく, 女性が一定の場所に決まった食品を配置する傾向があるのに対し, 男性はその配置が分散する傾向があることが分かった。これらの主観評価結果から, 配食保温容器における食器および食品の配置について提案した。

Delivery meal boxes have been used in meal delivery service for elderly people, with intent to preserve foods and their temperature. In this paper, the design of dishes' planar shape, size, arrangement of dishes and foods were studied with elderly and young subjective evaluation. As results, specific dish's shape and size for each foodstuff were chosen by the subjective, though the significant difference was not found between elderly and young, or male and female. As for foods arrangement, the elderly people tended to place each food in each dish. About dish and food layout, there were significant differences between elderly and young for specific foodstuffs. However the more critical difference was found between male and female; female placed specific layout for each foodstuffs, whereas male's layout varied widely. Finally the layout of food and dish in the meal box was suggested.
