ハーブオイルの酸化安定性  [in Japanese] Studies of Oxidative Stability of Herbal Oil  [in Japanese]

ハーブオイルの酸化について検討することを目的とし,以下の実験を行った.オリーブオイルにそれぞれローズマリーとバジルの生葉を添加し,明所に14日間置いてハーブオイルを調製し,その後暗所に保存した.ハーブ無添加のコントロールオイルおよび2種類のハーブオイルのPOV,ラジカル捕捉活性,総ポリフェノール量,総トコフェロール量の経時的変化を測定した.(1)POVの変化は,3種類のオイル間で有意な差はなかった.28日目以降は0日目に比べ有意にPOVが上昇したが,いずれも20meq/kg以下で70日まで可食の範囲であった.(2)コントロールオイルでは,α-トコフェロール量が減少したもののγ-およびδ-トコフェロール量は減少しておらず,総ポリフェノール量もラジカル捕捉活性も変化がなかった.(3)ローズマリーオイルは,α-トコフェロール量が減少したがコントロールオイルよりは減少が小さく,γ-およびδ-トコフェロール量は減少しなかった.総ポリフェノール量は調製中の14日間で減少しているがその後は変化もなく,ラジカル捕捉活性は変化なかった.(4)バジルオイルは,α-トコフェロール量の減少が最も少なく,バジルからα-トコフェロールがオイル中に移行したことが推察された.総ポリフェノール量,ラジカル捕捉活性は調製中の14日間で減少したが,以後暗所では変化なかった.(5)バジルオイル中に未知物質が認められ,HPLCリテンションタイムは,α-トコトリエノールと一致した.(6)ハーブオイルはコントロールオイルと比較して,抗酸化性の向上は認められなかった.逆に酸化の促進も認められなかったが,明所より暗所での調製がよりよいと考えられた.なお,この実験は放送大学大学院で行ったものである.常にお励ましをいただいた放送大学大学院客員教授,酒井豊子先生に心より感謝の意を表する.また,測定法についてご助言をいただいた奈良女子大学教授,的場輝佳先生に感謝申し上げる.試薬のビタミンE同族体を供与いただいたエーザイ株式会社の阿倍皓一氏に御礼申し上げる.

The oxidative stability is reported of herbal oil samples containing fresh rosemary leaves or basil leaves which were exposed to bright sunlight for 14 days. POV, the radical scavenging activity (analyzed by the DPPH method), the total polyphenol content and the tocopherol content were each measured. POV of all the herbal oil samples did not exceed 20 meq/kg untill 70 days had elapsed. The contents of α-tocopherol and polyphenol in the oil samples decreased slightly during the initial 14 days when exposed to bright sunlight The radical scavenging activity of the basil oil was substantially decreased. Although the contents of chlorophyll and carotenoid were decreased in the oil samples exposed to direct sunlight, these contents were increased in the oil samples stored in the dark. No oxidation of the herbal oil samples was apparent in any cases. It is therefore considered favorable to prepare herbal oils in the dark.
