化学肥料並びに有機肥料の土壌で栽培したメークイン種の一般成分の比較  [in Japanese] Comparison concerning generalingredients of potatoes May Queen between those cultivated the soil of chemical fertilizer and those grown in the organic-fertilized soil  [in Japanese]

生、茹で及び焼いたメークイン種の一般成分収穫直後の水分量は化学肥料土壌から収穫したメークイン種は72.5g%〜77.3g%で、有機肥料土壌から収穫したメークイン種は73.8g%〜80.7g%である。蛋白質は化学肥料が1.5g%〜2.2g%であり、有機肥料は1.8g%〜2.1g%、脂質は化学肥料がO.1g%〜0.3g%g、有機肥料が全て0.2g%、灰分は化学肥料が0.6g%〜0.8g%、有機肥料が0.8g%〜0.9g%、炭水化物は化学肥料が20.0g%〜24.2g%、有機肥料が16.1g%〜23.0g%である。6ヵ月間低温貯蔵したメークイン種の一般成分水分は化学肥料が81.3g%、有機肥料が78.9g%であり、蛋白質は化学肥料が1.5g%、有機肥料が1.7g%、脂質は化学肥料が0.2g%、有機肥料が0.1%未満である。灰分は化学肥料が0.7g%、有機肥料が0.8g%であり、炭水化物は化学肥料が16.3g%、有機肥料が18.6g%である。収穫直後の生の一般成分は、有機肥料は脂質量及び灰分量が多く、6ヵ月間低温貯蔵したメークイン種の生は、蛋白質の残存率が高く、灰分量の変化はない。一般成分を無水物に換算した数値蛋白質は化学肥料が6.58g%〜8.37g%、有機肥料が8.02g%〜9.52g%、脂質は化学肥料が0.44g%〜1.09g%、有機肥料は0.76〜1.06g%、灰分は化学肥料が2.63g%〜3.08g%、有機肥料が3.44g%〜4.23g%、炭水化物は化学肥料が88.01g%〜90.35g%、有機肥料が85.19g%〜87.78g%である。焼いたメークイン種の脂質量並びに茹でた場合と焼いた場合の炭水化物を除いて全て有機肥料の一般成分の含有量が多い。以上、メークイン種の一般成分含有量からみて、有機肥料の土壌から収穫したメークイン種の味は、蛋白質量や灰分量に関係あるのかもしれないと考え、次報ではアミノ酸量などについて報告したい。

The May Queen white potatoes (solanum tuberosum sp.) have been used for cooking and eaten because of its taste. In connection with the difference in taste of the May Queen potatoes between those cultivated in and harvested from the soil of the chemical fertilizer and those obtained from the soil of organic fertilizer, analyzed were the general ingredients of the potatoes, raw, boiled and baked, in two cases, one immediately after harvesting and the other after six-month storage at low temperatures. Studied also were the evaluations of the chemically fertilized soil and organic soil and their relationship with the ingredients values of the May Queen.
