人と人が共にする食事は,人のコミュニケーションにおいて重要な役割を果たしているが,食事中のコミュニケーションを分析した研究は少ない.ここでは,食事の提供形態として一人一人に事前に配膳がなされている銘々皿形式と,大皿から会食者が取り分ける大皿形式において,女性3人が会話をする映像を収録し,収録した映像データからコミュニケーションの行動を分析する.映像のスクリプトデータを作成し,そのデータを基に食事動作,視線,発話の統計量を調査してテーブルトークの構造を分析した結果,「銘々皿」は会話と食事の行動が相互に規制しあうために比較的整然としたコミュニケーションの場が作られること,一方,「大皿」においては比較的無秩序な行動の傾向が見られた.食事の提供形式によってコミュニケーション行動が異なることは,提供された食事の場において人の行動規範が変わることを示しており,同時に所定のコミュニケーション効果を得るためには食事形式を適切に選択することが重要であることが示唆される.

Table talk plays an important role in human communication. Nevertheless, few research efforts have been made for analyzing table-talk. In this paper we analyze structures of table talk focusing on dining styles: platter-for-share-style and individual-plate-style. We have transcribed and analyzed video recorded data in terms of feeding hand motions, gazes, and utterance behaviors. From the analyses it is found that individual-plate-style provides comparatively orderly manner situations where conversations and feeding motions control each other, on the other hand, platter-for-share-style tends to provide unregulated situations. The analyses suggest that dining styles may have considerable effects on behaviors in table talk, and besides that choosing appropriate dining style may produce satisfaction with the table-talk communications.
