Abstract

Sake producing industry in Niigata Prefecture has continued to demand new brewer's rice cultivar for DAIGINJO-SHU, especially brewed sake with outstanding taste and flavor, produced by highly (40%) polished rice grain. Then, Niigata Brewing Union, Niigata Prefectural Institute of Brewing and Niigata Crop Research Center jointly started to develop a new brewer's rice cultivar in l997 by utilizing the new breeding programs. From the cross of 'Yamadanishiki' and 'Gohyakumangoku', the progeny with late maturing, low protein content of rice grain and excellent polishing property was selected and named as 'Koshitanrei', which was released in 2004. For the stable production of 'Koshitanrei' with high quality, the examination meeting was organized by farmers, researcher, staff of extension center and brewers. The meeting was frequently held and discussed on the data of cultivation, survey result of grain quality, processing and utilization characteristics of 'Koshitanrei', Brewed sake of 'Koshitanrei' with high quality shows outstanding grade in resently sake-competition in Japan, status of Niigata-sake-brand is being certainly rised.
