Chemical disinfection [sodium hypochlorite solution (NaClO) and strongly acidic electrolyzed water] is often used as a disinfection method for fresh food products in food service facilities. However, issues including residual chlorine, elution of water-soluble components, and use of plenty of water have been reported. Aqua-gas (AQG), superheated steam containing high-temperature micro aqueous droplets, has a higher heat-transfer efficiency compared to other heating methods, and been proved to be effective in controlling microorganisms on food surface while maintaining fresh texture. Therefore, we compared disinfection effectiveness of AQG and NaClO on food products.Fresh vegetables (cucumber, cabbage, cherry tomato ) and fruit (Pione) were used as samples. AQG treatment was conducted in an Aqua GasR oven with the minimum heating time to keep the fresh texture of the samples. NaClO treatment was conducted according to the sanitation management manual for large-scale cooking facilities. Viable cell counts (VCC) and coliform bacteria counts (CBC) were determined by pour plate method. VCCs of washed samples were 300 cfu/g or less for cherry tomato and Pione, 105 cfu/g for cucumber, and 105 - 106 cfu/g for cabbage. Those of NaClO samples were 104 cfu/g for cucumber and 104 - 105 cfu/g for cabbage. All AQG samples showed VCCs of 300 cfu/g or less. Both VCCs and CBCs were lower for samples treated by AQG than NaClO, thus demonstrating the higher disinfection effectiveness of AQG. 洗浄試料の一般生菌数は、ミニトマトおよびピオーネにおいて300cfu/g以下、きゅうりにおいては105cfu/g、キャベツにおいては105~106cfu/gであった。NaClO殺菌試料では、きゅうりは104cfu/g、キャベツは104~105cfu/g、AQG加熱では全試料300cfu/g以下であった。AQG加熱試料の一般生菌数および大腸菌群数は、NaClO殺菌試料よりも減少しており、AQG加熱の殺菌効果の有効性が明らかとなった。さらに、AQG加熱は、他の加熱方法と比べて、高い熱伝導率による加熱時間の短縮により、生の食感を維持することができ、色調の評価も高かったことから、食材の食感や色を良好な状態で保ちつつ効果的な殺菌ができる方法であると言える。
