抄録

A simple method for determining vitamin D and provitamin D in fish meat was developed by using high-performance liquid chromatography (HPLC) with UV detector (265nm). After the crude fat egtracted with chloroform-methanol was saponified at room temperature, the unsaponified fraction was subjected to HPLC. Vitamin D₂ and D₃, and provitamin D₂ and D₃ were separated on a column packed with an ODS using CH₃CN-MeOH (80:20) as an eluent. The trace amounts of vitamin D₃ and provitamin D₃ were found in mackerel and saury muscles.
