The role of sugar in the diet is highly controversial one. Claims have been made that the increasing consumption of sugars is linked with the increased prevalence of certain diseases, but these claims have mostly been contested. This report reviews the evidence relating sugars in the diet to health, focusing on extrinsic sugars, ie those not naturally incorporated in the cellular structure of foods. The findings and recommendations will be of great interest to everyone following the current debate on healthy eating and the UK diet. Topics covered include the technological functions of sugars in foods, sugars as an energy source, intake of sugars in the UK, sugars and dental caries, metabolism of sugars, sugars and obesity, sugars and diabetes, sugars and cardiovascular disease, behavioural aspects of consumption of sugars, artifical and alternative sweeteners.
