In order to evaluate the color variation (Red, Green and Black) of the Japanese sea cucumber Stichopus japonicus, we quantified its skin color by RGB and L*a*b* models using digital camera and graphic editing software, and classified its pigment according to microscopic visual color. The results showed that, (1) L*a*b* was found to be more effective for the evaluation of color variation than was RGB, though both models could be considered useful. (2) The distribution of L*a*b* values in the Red type were clearly divided from both the Green and Black types. The mode of L*a*b* distribution in the Green type was different from that of the Black type but their distributions overlapped and were not clearly divided. (3) All of the Red type individuals had unique vivid red pigments which were not observed in the Green and Black types. (4) The Green and Black type individuals had the same color pigments. These results indicate the qualitative and quantitative differences existing in this species of Japanese sea cucumber.
