In order to investigate the changes of carcass composition in Meishan pigs during their growth, five, five and 17 barrows were slaughtered at their live weights of 30, 60 and 90kg, respectively. Each five or six barrows of two control breeds (Landrace and Duroc) were also slaughtered at the same body weights.
The carcass length increased in Meishan less than in the control breeds with increasing body weight, but Meishan showed bigger gain of the carcass width than the control breeds. The backfat thickness in Meishan increased rapidly from 30 to 60kg of body weight and the differences of the backfat thickness between Meishan and the other breeds became larger with increasing body weight. The loin eye area in Meishan increased less than in the control breeds and Meishan showed only minor changes from 60 to 90kg of live weight.
The carcass yield (in percentage) in Meishan was lower than in the control breeds at each body weights, but the changes of Meishan with growth was similar to those of the control breeds. Meishan showed higher percentage for the ratio of the fore part of the body and lower value for the ratio of the hind part than the control breeds and similar value for the ratio of the middle part to the contorol breeds at 30kg. The ratio of the fore part decreased and that of the middle part increased in Meishan more than in the control breeds from 30 to 60kg.
As for the ratios of lean, fat and bone relative to the carcass weight, Meishan decreased the ratio of muscle by 27.7 percentage units from 60 to 90kg of weight, whereas Landrace and Duroc decreased the ratios by only 7.4 and 2.5 percentage units, respectively. In contrast, Meishan increased the raio of fat by 34.9 percentage units from 30 to 90kg of body weight, whereas Landrace and Duroc increased by 5.4 and 11.1 percentage units, respectively. The raios of bone were in order Duroc>Meishan>Landrace at each body weights. Although control breeds showed no decrease in the ratio of M. longissimus dorsi with increasing body weight, Meishan tended to decrease during growth.
