Abstract

豚肉脂質の脂肪酸組成を明らかにするために, 大ヨークシャー種, バークシャー種およびデュロック種の胸最長筋, 大腿二頭筋および半膜様筋から抽出した全脂質 (TL) を中性脂質 (NL), リン脂質 (PL), フォスファチジルエタノールアミン (PE) およびフォスファチジルコリン (PC) に分画し, 各画分の脂肪酸組成をキャピラリーカラムガスクロマトグラフィーで分析した。その結果は, 以下のとおりである。<br>TLの主要な脂肪酸は, C16:0 (22.1~26.7%), C16:1 (2.6~4.1%), C18:0 (9.5~14.5%), cis C18:1 (38.8~45.0%), C18:2 (7.3~11.5%) であった。<br>NL画分の主要な脂肪酸は, C16:0 (23.2~27.8%), C16:1 (3.1~4.9%), C18:0(9.3~14.9%), cis C18:1 (46.6~50.8%), C18:2 (3.1~6.7%) であった。<br>PL画分では, 全不飽和脂肪酸が約75%前後を示し, モノ不飽和酸のC18:1が7.0~7.7%, 多価不飽和脂肪酸のC18:2が18.2~21.9%, C20:4が12.6~16.5%, C20:5が2.2~3.2%, C22:5が3.3~4.2%, C22:6が2.9~4.5%を占め, 飽和脂肪酸のC18:0が21.1~23.5%であった。またn-3系列の脂肪酸が約8.9~12.2%, n-6系列の脂肪酸が34.7~38.7%を占めた。<br>PE画分の脂肪酸組成は, PLと類似した組成を示し, 全不飽和脂肪酸が約74~82%を占め, 不飽和脂肪酸含量が高かった。また, n-3系列の脂肪酸が11.1~15.8%, n-6系列が34.0~37.0%を占めた。<br>PC画分では, 全不飽和脂肪酸が65%前後を占め, 多価不飽和脂肪酸は, C18:2が20.8~28.4%, C20:4が10.7~16.6%, C20:5, C22:4, C22:5およびC22:6がいずれも1%以上含まれていた。またモノ不飽和脂肪酸のC16:1が4.1~8.1%, C18:1がcisおよび trans 型を合わせて10.3~12.5%含まれていた。n-3系列の脂肪酸含量は, 4.3~5.5%, n-6系列の脂肪酸は, 39.1~45.0%であった。<br>各品種および各部位における脂肪酸組成は, 類似したパターンを示したが, 量的には, 各脂質画分において, 品種間で有意差の認められた脂肪酸が多かった。

The differences of fatty acid compositions of intramuscular lipids in Large White (W), Berkshire (B) and Duroc (D) fattened up to 90kg were studied. The intramuscular lipids were extracted from <i>M. longissimus thoracis, M. biceps femoris</i> and <i>M. semimembranosus</i> taken from three barrows and three gilts of each breed above. Fatty acid methyl esters of total lipid (TL), neutral lipid (NL), phospholipid (PL), phosphatidyl ethanolamine (PE) and phosphatidyl choline (PC) fractions were analysed by gas chromatography equiped with capillary column (liquid phase: PEG-20M).<br>The dominant fatty acids were C16:0 (22.1-26.7%), C16:1 (2.6-4.1%), C18:0 (9.5-14.5%), cis C18:1 (38.8-45.0%) and C18:2 (7.3-11.5%) for TL, and C16:0 (23.2-27.8%), C16:1 (3.1-4.9%), C18:0 (9.3-14.9%), cis C18:1 (46.6-50.8%) and C18:2 (3.1-6.7%) for NL.<br>Total amount of unsaturated fatty acids occupied about 75% in PL. In these fatty acids, the content of C18:1 as monoenoic acid was in the range of 7.0-7.7% and polyenoic acids accounted for 18.2-21.9% for C18:2, 12.6-16.5% for C20:4, 2.2-3.2% for C20:5, 3.3-4.2% for C22:5and 2.9-4.5%for C22:6. The amount of n-3 and n-6 group fatty acids was 8.9-12.2% and 34.7-38.7%, respectively. The predominant saturated fatty acids were C16:0 (2.0-3.7%) and C18:0 (21.2-23.5%).<br>The fatty acid compositions of PE were similar to those of PL. From 65.1% to 67.5% of total unsaturated fatty acids were occupied with polyenoic fatty acids. The amout of n-3 and n-6 group fatty acids was 11.1-15.8% and 34.0-37.0%, respectively.<br>In PC, total amount of unsaturated fatty acids was approximately 65%, and 20.8-28.4% and 10.7-16.6% of these fatty acids were occupied with C18:2 and C20:4, respectively, and the amount of each C20:5, C22:4, C22:5 and C22:6 was 1% level. The sum of n-3 and n-6 group fatty acids was 4.3-5.5% and 39.1-45.0%, respectively.<br>The patterns of fatty acid composition in three muscles tended to be similar, but in each lipid fraction, many fatty acids of which contents were significantly different among the species were observed.
