Abstract

The objective of this research is to produce indigestible dextrin from potatoes using a hydrothermal treatment with a short reaction time without catalysts. An investigation of suitable reaction conditions was performed using the steam explosion process in order to improve the recovery rate of valuable materials. Steam explosion is a kind of high temperature and high pressure water reaction that occurs in the solid phase and it offers a good hydrolysis reaction medium. By varying reaction temperature and time, the highest yield of 48% was obtained at 220°C and 10 minutes. The steam explosion reaction can be applied as an alternative technology for recovery of resources from agricultural waste.
