Abstract

エビ (<i>Penaeus sp</i>.) の誘電特性を明らかにするために, 誘電率および誘電損率を温度0~70℃, 周波数300~3000MHzにおいて測定し, 周波数や温度, 尾肉の繊維方向の違いが誘電率や誘電損率に与える影響などについて検討した。特に, マイクロ波加熱加工で重要となる915MHzおよび2,450MHzでの誘電特性について詳細に調べ, 誘電率および誘電損率がそれぞれ温度に関して一次式, 二次式で近似されることを明らかにした。また, 両周波数におけるマイクロ波の, 浸透深さと温度の関係についても考察した。

Dielectric properties of shrimp (<i>Penaeus sp</i>.) were measured at frequencies between 300 to 3, 000MHz from 0 to 70°C by using a network analyzer. The effects of frequency, temperature and sample orientation on dielectric properties were discussed. At all temperatures, the dielectric constant decreased as frequency increased from 300MHz to 3, 000MHz. The dielectric loss factor decreased with increasing frequency blow about 2, 000MHz, and then reached approximately constant or increased a little. For commercial significance, dielectric properties data at 915 and 2, 450MHz were considered in more detail. The results suggested a linear relationship between the dielectric constant and temperatures, and a quadaratic relationship between the dielectric loss factor and temperatures. The relationships between the penetration depth and temperature at both frequencies were evaluated from the experimental data.
