Abstract
醸造酵母においてはアルコール発酵作用に主眼がおかれてきたため,その研究に比べ好気的な増殖に関する研究はこれまで少なかった。特にミトコンドリアについては,その解析の困難さもあって,ほとんど研究がなされてこなかった。しかし,最近になって著者らの研究により清酒酵母において醪の時期の後半までミトコンドリアの存在が確認され,醸造酵母の新たな育種のターゲットとして浮上しつつある。ここでは,ピルビン酸のミトコンドリアへの輸送に着目し,その低減酵母の育種について著者らの研究を中心に解説していただいた。これを機に醸造酵母におけるミトコンドリア研究の今後の発展が期待される。
