Abstract

As to 25 authentic or natural phenolic compounds, superoxide anion radical-scavenging activity by the PMS-NBT method, the antioxidative activity by the mouse liver-BHP method, Fe^<2+>-chelating activity by the ferrous tartrate method, and the antioxidative activity by the mouse brain autoxidation method were measured and the activities were compared. In all methods used in this study, antioxidative activities of the phenolic compounds with triol-structure were higher than the activities of the compounds without such a structure. But, flavonols without triol-structure and nordihydroguaiaretic acid showed high antioxidative activities, though they didn't have triol-structure.
