The endogenous levels of ABA, IAA and Gas were analyzed to investigate physiological effects of plant hormones. In tomato fruits, distributions and their changes of phytohormone levels were determined. In citrus, phytohormone levels in fruitlets were determined in parthenocarpic and non-parthenocarpic cultivar. Tha mechanism of fruit drop by GA biosynthesis inhibitor was discussed in relation to hormone levels of mandarin. ABA was repeatedly applied to fruts, suggesting that ABA increases sugar concentration. In asparagus stem had high levels of ABA and IAA in tip region, suggesting that these hormones induce stem growth. Stress-relaxation analysis was applied to examine tissue softening in fruit using a conical probe. The technique was applied to banana. Physical and chemical properties of banana pulp were analyzed during softening. Cellulose contents did not change, but other cell wall components and starch contents decreased with identical pattern, which was similar to those of elasticity and viscosity. However, the partial breakdown of the cell wall preceded breakdown of starch. In cooking banana, the results analyzed suggest that cell wall polysaccharides are the chemical components responsible for the changes in firmness rathar than starch.
