抄録

A new method for determining free fatty acid content in fats and oils is proposed. The method is based on the measurement of the reduction prepeak current of 2-methy1-1, 4-naphthoquinone(VK₃) caused by higher fatty acids in ethanol solution containing LiClO₄. The measurement was made by potential sweep voltammetry using a glassy carbon electrode. The prepeak current height was found to be proportional to the total concentration of free fatty acid in oil samples ranging from 8×10^-6 to 6×10^-3M (γ=0.992). The free fatty acid content of 8 oil samples was determined. The relative standard deviation of content values for 5 replicates of each sample was less than 2.5%. The present method was proved to be far superior to the conventional titration method in sensitivity and precision.
