Abstract

本研究では、動的条件にも対応する微生物挙動予測エキスパートモデルの開発を最終目的とし、その第一段階として、種々の温度、pH値、NaCl濃度におけるBacillus cereusの生菌数の時間的変化を表す基本的な増殖モデルの構築を行った。その結果として、以下の知見を得た。1.Gomperzモデルは実験値と高い適合性を示した。2.Gomperzモデルを用いて算出した世代時間、誘導期は米国農務省のPahogen Modeling Programを用いて算出した予測値と同等の値を示した。3.文献値を用いて検証した結果、本モデルによる世代時間の予測値は安全側にあることが明らかとなった。

The modified Gompertz model was applied for predicting the growth of Bacillus cereus under various conditions of pH, NaCL concentration of culture medium and temperature. Caluculated values of cell population by the Gompertz model which was estimated parameters using by nonlinear least square method were agreed well with experimental values. The generation time and the lag time were predicted using parameters of Gompertz model which are represented as polynominal functions of pH, NaCL concentration and temperature. The predicted values were approximately equal to the values obtained by Pathgen Modeling Program. We will be able to estimate more safety shelf life of food by using the prediction value of generation time from the result of comparison with the value shown in previous reports. To realize our final goal of expert system for predicting the growth and death of microorganisms on food, it was necessary to acumulate more data of many different kinds of microorganisms.
