Abstract

本論文の目的は､かつて地域と密接に関わりのあった屠畜場が､諸般の事情により統廃合を余儀なくされ､地域から屠畜場が消滅したため､それを利用していた関係者が不便をきたしている状況を受け､改めて地域の食文化に関係の深い屠畜場設置の必要性を述べようとするものである｡沖縄島南部(南城市)の㈱沖縄県食肉センターが平成14年4月30日に山羊の処理施設を廃止し､中部(沖縄市)の中部食肉センター（株)が平成15年4月30に廃業した｡これを契機に山羊の屠殺可能な屠畜場は中南部から消滅した。平成15年4月1日以後､山羊を屠殺できる屠畜場は名護市に新設された名護市食肉センターのみとなった｡そのため中南部の山羊関係者は､山羊1頭を名護市まで運搬し､検査終了後(翌日)またそれを回収するため往復しなければならない｡これによる時間的､経済的､労力的損失は大きな負担となっている｡ The aim of this paper is to show, through the history of abattoirs in Okinawa Prefecture, how there is a need for slaughterhouses to be closely related to the local food culture. Abattoirs for goat meat used to have a close relaionship with the local communities in which they were located. However, for a number of reasons, many abattoirs have been forced to close and combine. There are now a smaller number and they are far away from the local communities they serve. This has caused considerable inconvenience among those who trade in goat meat. In April 2002, Okinawa Prefecture Meat Center Ltd. in Southern Okinawa (Nanjyo City) closed its goat meat processing facility, followed, in April 2003, by Chuubu Meat Center Ltd. in Central Okinawa (Okinawa City). This development put an end to the local goat meat trade. It meant having to transport a goat all the way to Nago City (Northern Okinawa) and having to make the same journey the next day to receive the carcass. This operation is becoming a great burden in terms of both time and economics.
