- 1619 Washing Effect of Ultra-Fine Bubble Mixtures Applied with External Stimuli

Because fresh vegetables are very important food for the people and their lifestyles are changed, its consumption has been gradually increasing due to the health consciousness. Moreover, not only the fresh vegetables but the fabricated foods are consumed for such as salads and pickles. As described the previous studies, the use of chemicals for washing fresh vegetables was essential in modern microbial removal process. When the chemicals were used, it must be considered the influence of the human body. Even through chemicals were used, concentration was close to zero as possible. The previous studies suggested possibility of washing effect against the fresh vegetables for fine bubble (FB) and ultra-fine bubble (UFB) in strong mechanical action. It is very interesting in terms of high efficiency on washing. However, the observations on effect of FB and UFB against the fresh vegetable were limited. In the present study, effect of FB and UFB on the bacterial eradication rate of fresh vegetables in an alternating flow, which was higher mechanical action in washing, was investigated, and their effectiveness was clarified (significant differences between water alone and UFB mixtures were obtained.) Thus, higher washing effect were obtained when been combined with an alternating flow.
