金沢工業大学は、文部科学省の「地（知）の拠点整備事業」（以下、COC 事業という） に採択され、地域志向型の教育・研究・地域貢献を進めている。平成 27 年度地域志向教育研究プロジェクト推進事業「機能性食品による地域ブランド力向上および食育推進プロジェクト ～ヤーコンにちは！野々市＆白山～」ならびに同 28 年度「地域特産物を活用した機能性食品開発プロジェクト ～ヤーこんなに健康に～」（以下、両プロジェクトを合わせてヤーコンプロジェクトという）は、本学 COC 事業の一環として学内選定されたものである。ヤーコンプロジェクトでは、地域課題として、地元の特産農産物であるヤーコンの地域ブランド化を目指し、地域・行政・大学が協働し、その現状把握や課題解決に向けた取組を行った。本稿では、ヤーコンプロジェクトの活動概要および参加学生の意識の変化を報告する。;The Kanazawa Institute of Technology was adopted by the Ministry of Education, Culture, Sports, Science and Technology for the “Center of community Project” (COC) and since then it has been promoting community-oriented education, research, and community contributions throughout the whole university. The 2015 Community-Oriented Education Research Project Promotion Project “Improving Regional Brand Power through Functional Food -Yaconnichiwa! Nonoichi and Hakusan” along with the 2016 “Functional Food Development Project Using Special Regional Products -Ya! Such Health” (Yacon Project) were selected on campus as a part of the university’s COC projects. This paper will provide an activities overview and discuss changes in awareness among participating students.
