Abstract

[抄録] 本論では,簡素化した食行動記録調査で収集したデータを用いて,青果物消費水準に与えるソーシャル・キャピタル(SC)の影響を考察した.先行研究を参照して選んだ7つの設問への回答状況と,主成分分析により統合した指標を用いてSCの水準を測定した.青果物消費水準は回答者が食した料理に含まれる青果物の割合を基に作成した指標で把握した.分散分析および相関係数の結果から,SC水準の高い回答者は総じて青果物消費水準も高い傾向が確認された.複数の要因を考慮した重回帰分析の結果からも,SCの蓄積が青果物消費水準にポジティブな影響を及ぼしていることと,青果物消費に対し年齢に次ぐレベルの説明力があることが明らかになった.

[ABSTRACT] This paper investigated the effects of social capital(SC) to the consumption level of fruits and vegetables(F&V) based on the data collected by partially simplified digestive recording survey. The level of SC was evaluated by the responses to seven questions selected from earlier investigations and by the result of principal component analysis. The level of F&V consumption was evaluated by the indicators based on the ratio of F&V in each dish which the respondent ate. Results of the analysis of variance and the coefficient of correlation show that the respondent who has higher level of SC consumes more F&V. The result of multi-regression analysis indicates that the accumulation of SC causes positive effects to the increase of F&V consumption level. The regression analysis also shows that the influence of SC to F&V consumption ranks second to that of age.
