Abstract

ブリ血合筋の褐変に及ぼす飼料と季節の影響を調べた。飼料中のαトコフェロール(αToc)量とアスコルビン酸誘導体は血合筋中の量に影響し,褐変はαToc量よりアスコルビン酸(AsA)量により抑制された。褐変は季節により異なり,メト化率は12月から3月より8月から10月が低かった。12月から3月のAsA量は低く,8月から10月の血合筋のpHは高かった。メト化率はAsA量とpHに相関したが,αToc量との相関は認められなかった。これらのことから,AsA量とpH低下抑制が褐変抑制の鍵と考えられた。

We investigated the influence of diet and season on the discoloration of dark muscle of cultured yellowtail Seriola quinqueradiata. The amount of α-tocopherol (αToc) and ascorbic acid (AsA) in the diet affected the amount in dark muscle and discoloration was inhibited by the amount of AsA rather than the amount of αToc. Discoloration was suppressed by adding ascorbic acid derivatives to the diet. Discoloration varied depending on the season: the ratio of metmyoglobin to total myoglobin (metMb) was lower from August to October that than from December to March. The amount of AsA from December to March was low, and the pH of dark muscle from August to October was high. Although metMb was correlated with AsA content and pH, there was no correlation with αToc amount. Therefore, the amount of AsA and suppression of pH decrease were considered to be the key to suppressing discoloration.
