Paying attention by nurses to the nutritional status of a patient can be said to be an important nursing act that leads to recovery of disease. Observation of diet not only leads to the discovery of health-related problems, but also is useful for the recovery of illness and maintaining and improving health. The study of nutritional science in basic nursing education also leads to the learning deviant pathologies through normal digestion, absorption, and metabolism processes, and is essential knowledge for nurses. Based on the "Act on Public Health Nurses, Midwives, and Nurses," the basic education for becoming a nurse faces limitations in the nursing system due to the "Regulations Concerning Training Schools for Public Health Nurses, Midwives, and Nurses" established by joint ministerial ordinance of the Ministry of Education, Culture, Sports, Science and Technology and Ministry of Health, Labour and Welfare. However, the nurse training courses are implemented in various educational institutions such as universities and various schools, and the length of time devoted to the study of nutrition in each course is not equal. The reason for this inequality may be due not only the development of nursing education, but also the influence historical background of nutritional science. Therefore, this article aims to examine the position of nutritional science in nursing education, especially from the transition of "nutritional education" classes in the nursing education curriculum and the background of nutritional education development in Japan, etc.
