Growth patterns for muscle, fat and bone, and carcass composition were compared among Japanese Black (JB), Japanese Shorthorn (JS) and Holstein (Ho) steers using 33, 16, 18 heads respectively. Every steers were fed concentrate ration ad libitum, and JB and Ho steers were fed one kg of cut rice straw per day and JS steers were fed grass hay ad libitum. Serial slaughter was done within the weight ranges of 335-674, 353-663 and 460-689 kg for JB, JS and Ho, respectively. Growth coefficients from allometric regressions of carcass, muscle, fat and bone weight and muscle: bone (M: B) ratio on most items of slaughter weight, carcass weight and each carcass tissue and muscle+bone weights were not differed significantly between JB and Ho except the coefficient from the relation between bone weight and carcass weight. Muscle growth of JB and Horegressed on bone growth was almost linear in whole bone weight ranges, but in case of JS, the depression of muscle growth was occured at relatively light muscle weight stage. Average muscle: bone (M: B) ratio of each breed differed significantly and JB had the largest and Ho the smallest ones. But the ratios within same breed did not change so much in the whole bone weight range measured. As the differences of the ratios among breeds were already shown at the first slaughterpoint, the difference of M: B ratio seemed to be genetical one. Differences of the growth coefficients of fatty tissue regressed on muscle and bone growth between JS and the other two breed were significant, and as JS had high fatty tissue growth potency and the muscle growth of them declined at the stage of relatively light muscle weight, JS seemed to mature earlier than the other two breeds. Between JB and Ho, there were no significant differences about the growth coefficients of muscle regressed on fat and bone, and the average fat: muscle ratio.
