抄録

Purebred steers of Japanese Black, Holstein and Japanese Shorthorn and crossbred steers between F₁ cow (crossbred between Japanese Black bull and Holstein cow) and Japanese Black, Japanese Brown and Charolais bulls of totally 153 heads were fattened and slaughtered serially. Each carcass was cut into 7 joints and dissected into muscle, fat, bone and tendon etc. Distributions of each tissue to joints were compared among Holstein and Japanese Shorthorn, and those to Round•Shank were hihg in Charolais cross. Muscle distribution to Rib•Loin was inclined to be higher in Japanese Black than other breeds, Bone of Holstein distributed higher to Round•Shank and lower to Rib•Loin than to the other joints. Low musde and high bone composition of Holstein steer carcass characteristics were improved to almost similar carcass composition of Japanese Black of high muscle and low bone by crossing up to 3/4 of Japanese Black.
