Abstract

動脈硬化予防のために、全粒穀物である玄米の有用性が見直されている。本研究では、主食として白米、玄米および発芽玄米を摂取した場合の糞便中脂質の排泄量を比較した。対象者9 名(女性7 名、男性2 名)を3 群に無作為に分け、クロスオーバー法で白米、玄米、発芽玄米を等量摂取させ、便中の脂質排泄量を比較した。各米飯の摂取期間は7 日間とし、各期の間に5 日間のwash-out 期間を設けた。エネルギー、たんぱく質、脂質などの摂取量は3 群間で有意差はなかったが、食物繊維摂取量は白米摂取期に比べ玄米および発芽玄米摂取期で有意に多かった(p<0.05)。便中の総脂質排泄量は、各期では有意差は認められなかった。一方、便中コレステロール量は、白米に比べ玄米で有意に多く(p<0.05)、発芽玄米でも多い傾向が見られた(p=0.06)。以上の結果は、全粒穀物の玄米や発芽玄米の摂取によってコレステロールの糞便中への排泄量が高まる可能性を示唆するものである。

The benefits of the use of brown rice as whole grains in prevention of atherosclerosis has been reported, however, the mechanism is still not fully understood and suggested to be related absorption of nutrients. In this study 9 subjects were randomly divided into 3 groups in which 3 differently processed rice such as white rice, brown rice and pre-germinated brown rice were provided by a cross-over design. The volunteers were received one of the 3 types of rice for 7 days in each period and wash-out period between the dietary treatments was 5 days. Energy and nutrient intakes were similar among the 3 periods except the fiber intake was higher in the brown rice and pre-germinated brown rice periods than in white rice period (p<0.05). Compared with white rice, fecal cholesterol excretion was higher by brown rice(p<0.05) and was tended to be higher by pre-germinated brown rice (p=0.06). In conclusion, brown rice and pre-germinated brown rice were suggested to increase fecal cholesterol excretion.
