Effect of White Rice, Brown Rice and Pre-germinated Brown Rice on Fecal Cholesterol Excretion

Abstract

The benefits of the use of brown rice as whole grains in prevention of atherosclerosis has been reported, however, the mechanism is still not fully understood and suggested to be related absorption of nutrients. In this study 9 subjects were randomly divided into 3 groups in which 3 differently processed rice such as white rice, brown rice and pre-germinated brown rice were provided by a cross-over design. The volunteers were received one of the 3 types of rice for 7 days in each period and wash-out period between the dietary treatments was 5 days. Energy and nutrient intakes were similar among the 3 periods except the fiber intake was higher in the brown rice and pre-germinated brown rice periods than in white rice period (p<0.05). Compared with white rice, fecal cholesterol excretion was higher by brown rice(p<0.05) and was tended to be higher by pre-germinated brown rice (p=0.06). In conclusion, brown rice and pre-germinated brown rice were suggested to increase fecal cholesterol excretion.
