Abstract

The aim of the current study was to evaluate whether decisions about food modification using qualitative assessment of an individual’s grip strength and tongue pressure. Subjects were divided into two groups including healthy elderly individuals and elderly individuals who had been hospitalized or admitted into a nursing home. Individuals from each group were evaluated using the following diagnostic assessments: tongue pressure using a disposable tongue pressure measurement device, grip strength, and regularity of food intake. There was a significant difference between subject groups for tongue pressure and grip strength. Furthermore, these factors were negatively correlated with age, especially in elderly individuals who had been hospitalized or admitted into a nursing home. Tongue pressure was not observed to correlate with irregular food intake. The results suggest that if an elderly individual has been hospitalized or admitted into a nursing home and diagnostic assessment reveals a grip strength of ≥20 kg or tongue pressure of ≥ 35 kPa, then he or she should be capable of normal food intake without modification.
