Abstract
<p>In general, the adsorbed films of surfactants are classified into two-dimensional gas, liquid and solid states. However, two-dimensional solid film has been limited for sparingly water soluble nonionic surfactants due to the in-plane repulsions between head groups and competition with micelle formation in the bulk solution. In this review, we will introduce the methodology for the freezing transition of the surfactant-oil mixed adsorbed films and its application to oil-in-water emulsion stabilization.</p>
