A rapid analytical method was developed for estimating the dietary intake levels of methyl and ethyl alcohols from foods (excluding alcoholic beverages). These two alcohols were extracted with acetonitrile from samples and analyzed directly with an FID gas chromatograph.
The dietary intakes estimated by the duplicate portion method were 0-76mg/man/day for methyl alcohol and 120-6110mg/man/day for ethyl alcohol. The amounts estimated by the market-basket method were 8.1mg/man/day for methyl alcohol and 865mg/man/day for ethyl alcohol. A market-basket procedure to estimate the dietary intakes of food additives was also applied. The results indicated that the dietary intakes of methyl and ethyl alcohols were 8.8 and 577mg/man/day, respectively.
Methyl alcohol was detected in fruits and vegetables. Ethyl alcohol was detected in a wide range of food samples. Bread, miso and soy sauce showed relatively high ethyl alcohol contents.
