Organic acids in grape musts and wines were determined by a new carboxylic acid analyzer, employing high-performance liquid chromatoraphy with a specific and highsensitive detection method. Galacturonic, pyroglutamic, lactic, acetic, tartaric, malic, citric, succinic, and α-ketoglutaric acids were completely separated within nearly 130 minutes. The relationship between peak area and concentration of the above mentioned acids was linear in a wide range. The lower limit of determination for various carboxylic acids was approximately 0.5n moles. Recovery (97-103%) of main seven organic acids (tartaric, malic, succinic, acetic, lactic and galacturonic acids) in the wine was satisfactory. The values determined by this method were excellently reproducible. This procedure was successfully applied to various grape musts (four samples) and table wines (14 samples).
