Dairy cattle is the main producer of animal protein for the nutrition of the world's population. For farmers, peasants and nomads it is one of the fundamental sources of income and subsistence. This volume covers the world distribution of dairy cattle; breeding and feeding as the basis of milk production; milk composition and sanitary and health aspects from the nutritional view point; and management of dairy herds and dairy cattle in the tropics as milk production systems.
