内容説明
Recent studies indicate that the elderly suffer from malnutrition due to such factors as: difficulties with physical ambulation; limited financial resources; gastro-intestinal disorders; medications that interfere with nutrient utilization; and limited psychological support. This volume offers a full appraisal of the nutritional needs and problems of the elderly. It identifies impediments to good nutrition in the elderly and defines the role of nutrition in both the aging process and the degenerative diseases that afflict the elderly. It offers clinical experience and research findings that are relevant to understanding these problems and implementing sound nutritional care. In-depth coverage shows how the aging process is affected by such dietary factors as: vitamins; Omega 3 fatty acids; protein; trace elements and alcohol. Detailed studies also examine the effects of nutrition on: immunity; hepatic drug metabolism; the heart; gastro- intestinal disorders; cancer and anemia.
