In this volume, international experts in nutrition, paediatrics, internal medicine, sports medicine and the basic sciences provide a view of the role of sugars in health and disease. The contributors examine the digestion, absorption, metabolism and physiological effects of sugars, present insights on congenital and acquired disorders of sugar digestion, absorption and metabolism and assess the relationship of sugar to obesity, diabetes, hyperinsulinemia, and hypertension. Included are findings on the genetic aspects of the enzymes that digest sugars, the genetic defects that produce disorders of sugar digestion and the disorders of carbohydrate digestion and absorption that cause sugar-induced diarrhoea. Investigators explain why intestinal lactase activity persists after weaning in some groups of humans while most humans and other mammals lose their intestinal lactase and become unable to tolerate dietary lactose. Other contributors describe the pathophysiology and clinical features of mucopolysaccharide storage diseases, glycogen storage diseasse and disorders of carbohydrate metabolism.
Attention is given to the lipogenic potential of sucrose and fructose, the effects of increased sucrose consumption on carbohydrate and lipoprotein metabolism in individuals with insulin resistance and the relationship of diatary changes to the increased incidence of diabetes and cardiovascular disease in industrializing societies. Recommendations are presented on the assessment and dietary management of obesity and on dietary sugar consumption by athletes. The book also includes discussions on non-nutritive sweeteners, the sugar industry and the economic aspects of sugar.
