The role of nutrients in gene expression and the importance of gene-nutrient interactions in determining the health status of individuals and populations are currently under investigation. The first three papers in the volume review the nutritional factors in the development of non-insulin dependent diabetes mellitus (NIDDM), describe the latest research on the role of vitamins B6, D and E in hypertension and the role of omega-3 fatty acids in cardiovascular disease. The contributors include new concepts and explore mechanisms derived from epidemiological studies, clinical investigations and animal experiments. A most appropriate complement is the final paper on the affluent diet, which illustrates that Western-style dietary changes are invading other parts of the globe, often with dire consequences.
