内容説明
Sugarless - Towards the Year 2000 is published at a time of changing thought on the role of sugar in the UK diet. In recent years the government has set quantitative limits for consumption of non-milk extrinsic sugars and the British Dental Association has launched the British Association for Toothfriendly Sweets. The book reviews progress made in reducing sugar intake and in the use of non-sugar sweeteners as a replacement for sugar. It presents a valuable exchange of views on this interdisciplinary subject, with contributions from dentists, food scientists, industrialists, nutritionists, and food legislators. Sugarless - Towards the Year 2000 focuses on two principal groups of sugar-containing products - confectionery and liquid oral medicines - and on reducing sugar intake to reduce tooth decay. It records the considerable progress made to date, as well as indicating where further work is required, in the move towards a sugar-free diet. While dietary goals have already been agreed, achieving them requires the cooperation of several different groups including dental, medical, and pharmaceutical experts; nutritionists; food regulators; and those in industry involved with development, manufacturing, and marketing. Sugarless - Towards the Year 2000 is a must for those concerned with this issue in all these groups, and should help to stimulate that very cooperation. It will also be essential reading for undergraduates, post-graduates, teachers, and researchers involved in dentistry, food sciences, nutrition, and medicine.
