This is the first of two volumes presenting the proceedings of the 1st International Congress of the International Society for the Study of Fatty Acids and Lipids (ISSFAL). It includes a summary of the round table discussion on The Future of Fatty Acids in Human Nutrition: Health and Policy Implications as well as the Health Message Statement on Fatty Acids developed by a subcommittee of the ISSFAL Board. Featured in this volume are the papers presented at the sessions on enzymes of PUFA metabolism and oxidation, fatty acid oxidation, fatty acids and cell signalling, fatty acids and human physiology, maternal and infant nutrition, mechanisms of accretion of polyunsaturates in the nervous system, PUFA and natural antioxidants, and isometric fatty acids. Taken together, the publications provide the most up-to-date information on the physiological and metabolic aspects of fatty acids and lipids in health and disease. A special focus is placed on the role of omega3 fatty acids and their relationship to omega6, omega9, saturated fats and trans fatty acids.
These proceedings will undoubtedly interest biomedical and clinical researchers in the fields of physiology, biochemistry, nutrition and dietetics as well as policymakers at government level.
