This text aims to provide a basic understanding of amphipathic molecules and their importance in relation to the structure and function of biological membranes. The book first addresses the lipids and proteins found in biological membranes, and the nature of their hydrophobic interactions, and then progresses from the basic chemistry of these building blocks of membranes, through monolayers, micelles, and bilayers, to those membranes found in cells. The structure of biological membrane is covered in detail, including the receptors and ion channels that are found in cell membranes.
