Compiled and edited by Rose Elliot, who herself contributes over 20 of her favourite recipes, this book is a collection of original vegetarian dishes which include guacamole, Mexican pepper casserole and Sudanese peanut soup. Divided into 8 chapters, the book includes recipes for every occasion, from starters and soups to main-course rice and pasta dishes, tea-time treats and desserts. All the recipes have been tested and the ingredients are readily available. Royalties from the sale of this book are paid directly to Oxfam.
