This volume examines the nutritional needs of preschool and school-age children and adolescents and assesses the nutritional impact of dietary habits that are common in these age groups, particularly in industrialized and transitional societies. The book discusses the physiological roles of carbohydrates, protein, lipids, calcium and other nutrients and the importance of childhood nutrition in preventing such health problems as cardiovascular disease and osteoporosis. Full consideration is given to the effects of fast foods, soft drinks and vegetarian diets on the nutritional status of children and adolescents. Also included are in-depth discussions of the nutritional requirements of young athletes and the nutritional aspects of eating disorders.
